Tips and Tricks

Use Firm Tofu

Firm tofu is the kind between extra-firm and silken. It’s perfect for a meal like this, since you want the tofu to crumble, but not completely fall apart. If firm isn’t available, you could swap with extra-firm, but don’t use silken - it will be too soupy.

Adding other flavors

You can and are encouraged to make this dish your own! This recipe gives you the basics, but if you enjoy adding herbs or other things into your scrambles, then by all means do so!

Why turmeric?

Turmeric powder is used in several South Asian cuisines. It acts as an anti-inflammatory, making it a very healthy thing to add to your curries.

The primary reason it’s added here however, is for it’s color. This makes the tofu scramble look much like scrambled eggs would look.

Ingredients:

  • 7 oz. (1/2 a packet) of firm tofu (*See tips and tricks)

  • 1 tbsp olive oil

  • ¼ cup shallots, minced

  • 1 - 2 tbsp plant-based milk

  • 1 tbsp nutritional yeast

  • ½ tsp turmeric

  • 1 tsp kosher salt

  • ½ tsp ground pepper

Directions:

Start by draining your tofu as much as possible. Crumble it into a bowl enough to where the pieces are bite-sized and mimic how scrambled eggs look (no need to be perfect here - you can always use a spoon to crumble the tofu further while it’s in the pan).

Heat the olive oil in a medium-sized pan over medium heat. Once shimmering, add the shallots, sprinkle on a pinch of salt, and stir for 2 - 3 minutes, until the shallots are soft.

Add the tofu and stir. Cook with the shallots for 3 - 5 minutes, or until the water from the tofu is mostly gone.

Add the plant-based milk. Use as much as is necessary to create the desired texture. (I.e. if you like your scrambled tofu loose and moist, add more milk). Add the nutritional yeast, the turmeric, salt, and pepper. Stir together and taste test to make sure everything tastes how you like it. Adjust as needed.

Cook and stir frequently for another 3 - 5 minutes (longer if you like your tofu to be slightly browned).

Take off the heat and serve. Enjoy!
