How to adjust

You can adjust the ratios of water, milk, pumpkin, and spice as you see fit. If you like your chai with extra spice, add more! If you prefer a creamier tea, consider adding more milk. If you love the pumpkin flavor, consider adding a little more than is called for.

Can I use Chai tea bags?

You can. If that’s what you decide, you don’t really need to add any more spice (cinnamon, ginger, clove, etc.) to this unless you want to make the chai flavor even more powerful.

Ingredients:

  • 2 bags black tea (or 2 tbsp loose black tea leaves)

  • 1 cup water

  • 1 cinnamon stick

  • 3 cloves (or 1 tsp ground cloves)

  • ½ tsp ground ginger

  • 3 cardamom pods, crushed (optional)

  • 2 ½ tbsp pumpkin purée

  • 2 tbsp pure cane sugar

  • ½ cup plant-based milk

Directions:

Place the water, tea bags, the cinnamon stick, cloves, ginger, and cardamom pods (if using) into a small saucepan. Heat over medium-low heat until boiling.

Bring the mixture to a simmer. Add the pumpkin purée, the sugar, and the plant-based milk. Stir and cook for another minute or so. Taste test and adjust as needed.

Once everything is fully blended and tastes how you like, take off the heat and strain into 2 tea cups. Enjoy!
