Pineapple Coconut Clouds
This drink is as light as the breeze on a warm summer day. The natural sweetness of pineapple juice blends perfectly with the silkiness of coconut milk. With a dash of lime juice, and a little tequila if you want to make it a cocktail, this drink is the perfect summer cooler.
Tips and Tricks
Do I have to use coconut milk?
You can certainly opt for coconut water if that’s your preference. When using coconut milk, be sure that it’s silky smooth.
You could also add almond or oat milk if you’re not after the coconut flavor, but still want the ‘cloudy’ look to the drink.
Which alcohol is best?
We opted for tequila in this recipe. It’s a bright, refreshing addition if making the alcoholic version of this drink. Rum would also go nicely with the tropical vibe of this drink.
What else can I add?
Anything! Add more to your garnish (like a cherry, or a mint leaf) or add another juice to compliment the pineapple.
Ingredients:
(for two drinks)
½ cup pineapple juice (from a can of pineapples or fresh)
¼ cup coconut milk
dash of lime juice, to taste
2 cups sparkling water
For cocktail version:
2 tbsp tequila
Directions:
Start by placing some ice cubes in each of the glasses you intend to serve the drink in. Place in the refrigerator to cool further or set aside.
In a small mixing bowl, mix together the pineapple juice, coconut milk, and lime. Taste to be sure the flavor is to your liking. **If you’re adding alcohol to this, do so now.
Mix thoroughly, then divide the mixture evenly between your two glasses. Pour one cup of sparkling water each into each glass.
