Butterscotch chips are the star feature in these chocolate chip cookies with a twist. Using plant-based butter and almond milk create a base for these soft, addictive cookies. Add in other ingredients (like pretzels or chips) to make them fun and unique!

I love butterscotch chips, and these cookies are really an excuse to do something with them. But not everyone likes them, and the vegan versions are tricky to find. If they’re not available, or you’d prefer something else, by all means go for it! As stated in the intro, there’s really no limit to what you can put in these.

Ingredients:

  • 1/2 cup vegan butter (Miyoko’s preferred), softened

  • 3/4 cup brown sugar

  • 1/4 cup organic sugar

  • 1/4 cup almond milk (or another alternative, if preferred)

  • 2 tsp vanilla extract

  • 1 3/4 cup all-purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp kosher salt

  • 1 cup vegan butterscotch chips

  • 1 cup vegan chocolate chips

  • sea salt (optional, as a topping)

Directions:

Preheat the oven to 350 degrees Fahrenheit and grease or line your baking sheets with parchment paper.

In a large bowl or in the bowl of a stand mixer, add the vegan butter, brown sugar, and granulated sugar. Cream the ingredients together. Then add the almond milk and vanilla extract. Mix again until everything is fully mixed.

Now add the flour, baking soda, baking powder, and salt to the bowl. Mix everything together until you have a cohesive dough. Add the butterscotch and chocolate chips in last and stir slowly until they’re fully incorporated.

Using your hands, create balls of dough about an inch in width and place on the prepared baking sheet, placing them at least 2 inches apart. Bake in the oven for 12 minutes, or until the outsides are slightly browned but the middle looks slightly underbaked. Take out of the oven, let them sit on the baking sheet for another 5 minutes, then transfer to a cooling rack.

Sprinkle with sea salt if desired!
