Whipping up some tofu ricotta, par-boiling the rigatoni, stuffing asparagus and tofu ricotta into the rigatoni, then lavishing it all in a simple plant-based béchamel sauce and baking for a bit at 350 degrees Fahrenheit, I was pleasantly surprised by how this turned out. Why are some asparagus white?

White asparagus is a delicacy mostly in Germany, where various farms create ‘hillings’ where asparagus grows completely underground. The lack of sunlight accounts for the white color and the change in flavor. In all other respects however, they’re the same as green asparagus.

How long have humans been cultivating asparagus?

Ancient civilizations in the Mediterranean regions had been harvesting wild asparagus as far back as 3000 B.C. The Romans grew it and dispersed it across Europe. One of Emperor Augustus’s phrases actually features the plant: “faster than cooking asparagus” meant to do something quickly.

What vitamins does asparagus have?

Asparagus are high in Vitamin K (a crucial vitamin for bone health and preventing blood clotting) and Folate (or B9). It is also an excellent source of antioxidants and fiber.
