Sautéing apricots is an interesting experiment. The juices flow, carrying over into whatever else it’s cooking with (in this case, almonds). The flavor ended up being magical and truly made the salad.

Why are some asparagus white?

White asparagus is a delicacy mostly in Germany, where various farms create ‘hillings’ where asparagus grows completely underground. The lack of sunlight accounts for the white color and the change in flavor. In all other respects however, they’re the same as green asparagus.

Ancient civilizations in the Mediterranean regions had been harvesting wild asparagus as far back as 3000 B.C. The Romans grew it and dispersed it across Europe. One of Emperor Augustus’s phrases actually features the plant: “faster than cooking asparagus” meant to do something quickly.

What vitamins does asparagus have?

Asparagus are high in Vitamin K (a crucial vitamin for bone health and preventing blood clotting) and Folate (or B9). It is also an excellent source of antioxidants and fiber.

Growing asparagus, from seedling to edible plant, actually takes three years. Though you’ll see spears in the first two years, asparagus isn’t edible until it’s third year of growing.
